If you’re lucky enough to have a full-fledged espresso machine to experiment on, making minor adjustments to any of the steps below will affect the fullness, richness, and intensity of the cup.

Your Guide To Espresso
Preheat your machine, portafilter and cup before you do anything else. A cold portafilter drops the temperature mid-extraction and throws everything off.
Weigh out your coffee and grind fine. Spread the grounds evenly across the basket before you tamp, it just makes your shot better.
Tamp with firm, level pressure. What you're creating is a consistent bed for the water to push through. If it's uneven, the water will find the easy route and skip the rest.
Lock the portafilter in, place your cup beneath the spouts.
Start the extraction immediately. You're aiming for 36–40 g of espresso in 25–30 seconds.
Stop as soon as you hit your yield. Pull it too long and it turns bitter. Too short and it's sour. Once you find the sweet spot, you'll know.
